Got Questions???

Hi friends - need help in the kitchen, do you have a grilling or cooking question, do you need some tips?  I hear the "heat" has been getting to some of you, so let me try and help!  Respond to my post or send me a quick email (chivescatering@me.com) whatever works for you!

  1. So....we ruined two racks of ribs trying to slow grill them yesterday. Should we have par boiled them first and quick grilled them?

Good morning-Trying to cook ribs from raw or par boiling them will totally dry them out-I take the whole ribs and dry rub them with Kosher salt,Fresh pepper and your favorite rub mix-coat the ribs well and let sit a few minutes-preheat your oven to 300 degrees and slow roast the ribs in a baking dish/foil pan(whatever you have that will fit the ribs in)
    put two cups of water and 1/2 cup of apple cider vinegar in bottom of pan and cover with plastic wrap then aluminum foil -make sure it is sealed and bake for about 1 1/2 hours or until meat is almost pull apart tender-quick grill with your favorite sauce -the sealed slow cooking method will yield a very tender moist rib that will fall off the bone for you -Thanks for the great question and enjoy
